While I will enjoy playing with my Rotavap, I want to get into a 10-15 gal setup. I have been brewing 20-49g batches of all grain home brew for a long time so mashing is easy.
I understand the sensitivity of being shown how to do something, but I'm willing to meet you out somewhere or brew some beer at my shop first. I would prefer something local to Hendersonville TN but I'm a private pilot with a pretty fast airplane so travel isn't a big problem.
I would enjoy talking to anyone who is willing to guide me so I avoid some mistakes.

In the time it takes to organize a meeting with someone you could just spend an hour or two a night reading here and you should have a good understanding of how to run a still, for the basics anyway. Hell, learning to AG mash is a lot harder then running a pot still and if you are doing large batch mashes you probably have your equipment squared away.
Do a mash for a non-imperial dry "beer", something like all 2-row pale ale, 2lbs/gallon & as dry as possible, low mash temp for a long time. No hops, boil or no boil, ferment with bread yeast, make a starter or just dump and go. Then pot still it real slow and air it out. Cut to proof and enjoy some white and age some on oak cubes like a wine or strong wood aged beer, viola!

I think just running the still and making the cuts intimidates me, any good reading on those areas?

Stillin' has a reputation for making people blind or always being on the verge of blowing up. People who have no idea how a still works can be lead to believe they are death traps or poison makers just by their nature. New stillers are always coming here and the first thing on their first post is, "I don't want to make myself blind!" or "I don't want to blow myself up!".
