Ujssm question ?

I am on my 8 generation of ujssm. I have never had a problem with any of my ferments. This last ferment didn't start very fast and is bubbling very slow. I wonder if my ph is to low and I should put something in my next ferment. Any thoughts?

i know some guys who swear they go deeper, however i have never been able to get real successful after 7 or 8 gens.. that's about as deep as i go and yess your PH may be off by now. if you dont get all the Alcohol out of the fermenter, add to much backset back, or let ferment dry, you can definitely mess up the pH

If you have been replacing spent corn you could save it a couple ways. I use calcium carbonate from the brewstore to bring my ph back up to a reasonable number, and I use alot more backset than the recipe calls for.
You could also just use almost no backset for a generation, a sweet run so to say, and start over with fresh yeast. You could wash your corn of old yeast, sort of a cleanup in your fermenter. I try not to let the yeast sludge build up too much because I think it may shield some of the corn from the sugary fermenting liquid, hiding the nutrients.
Or you could just start over if corn is cheap and easy to get for you.

I just drained my fermenter on my latest run. What I noticed was that I was leaving almost a gallon of mash in with my corn because I was only siphoning it off to the top of my corn, add that to the 25% or 1 gallon of backset and I think I was getting into too much backset/mash and not enough fresh. I gave it a real good aeration and a stir so I will let you know if its come back full force. I am a little less then 25% on this one so it will be a tad sweeter.
