yeast making my head spin

ok so sorry if this post unsets anyone but i've been browsing through alot of post on here and cant seem to find eveything i'm looking for.

right now i use turbo yeast, starting to see thats a big no no. i been wanting to get off the stuff for some time now. would like to get turned onto the bakers yeast.

what works good for a sugarhead wash? grain wash?
will the mash need more then just sugar, water and yeast?
what percent will the yeast make up to?
should i start every yeast in a "mini" wash first?
what SG should i not exceed with bakers yeast?

again im sorry if this post upsets anyone. just having trouble sorting through all the post.

copying someone else's recipit doesnt help me learn anything about the yeast.

Not sure what that means. You've learned one of the most basic and important things about yeast already - turbo is crap. Other than that, I don't think you should make yeast your primary concern at this point. The "Tried and True" recipes have a lot to teach you about what's important to the fermentation process. If you read the recipe and then the comments that others have posted, you will learn about nutrients, water (yes, water is an important subject), PH adjustments, temperatures, and much more. All the knowledge you need to develop your own recipes is right there in those recipes developed from the expertise of experienced stillers. From those recipes you will learn what it takes to develop your own successful recipes. It's not just a matter of throwing a bunch of crap in a bucket and expecting something worthwhile to come of it.

What yeast? Anything but turbo yeast. LOL. Bakers yeast will work with about all of them. If you want to get real technical. You can use a wine yeast for fruit washes. A beer yeast for grain washes or mashes.

A mash needs grains and no sugar. I will assume you ment wash. In which case it needs nutrients. Yeast can't live well without nutrients.
what percent will the yeast make up to?
Around here we like to recommend 14% being the highest you want to make. And 10% to 12% is better.

Do you mean a starter? It's a good idea. But pitching dry yeast works for some. It's personal preference dictated by what works for the person in question.

Question already answered above. 14% potential ABV is the highest you want.

thanks guys, esp for being so helpful with something i'm sure you all went over a million times. i think i was just getting to over whelmed with all the information on here and i think you guys have already calmed me down and put things in perspective. as for now i have about 5 more bags of turbo left so i'll keep making that until it's all gone. that'll give me some time to read up on things. thank you both again.

yup go to a tried and true recipe the comments on them will tell ya what ya need to know.

i've been reading the parent site ever since i started distilling. some times it seems like i get mixed messages from it but starting to sort through everything now. it's a slow process but i'm starting to catch on!

Yeast can be really simple or really complex. Just no turbo. A good DADY will serve you well. As will bakers yeast. A lot can be done with yeast or next to nothing. Your choice. Take your time. Your protocol will come to you. Yeast is a big thing to me.

I know where you are coming from! But as you go and listen to the right people (that part is a trick you will have to sort out for yourself! I personally feel like you are in a good crowd right now!) You will find answers by looking at there previous post.
I'm glad things are coming together for ya! :thumbup: It's always good to have another member to ask stuff and keep the grey matter working!
Tried and true will help you to learn how yeast is used just read between the lines.
I know it sounds like I'm saying read, read, read, but that really is the best way to learn here.
Unless you can get one of the master's to come over and give you a private tutor!
