Re: what are you fermenting in?
Add the sugar to the water, built a fire make it hotter, from the hopper to the copper and it's moonshine
Re: what are you fermenting in?
I use a 6.5 gallon plastic bucket, no petcock on the bottom. It works well usually.
Last night I put together my first banana brandy, I pitched D47 yeast put the cover on added the airlock. Plenty of head space or so I thought.
A few hours later about 1:00 AM, I hear a very loud pop and say to myself that can't be good. I usually use 1118 but I read that the D47 is better for fruits. I guess it works much quicker also. The 1118 can take a while to start and I have never had an explosive incident.
The top blew off across the room. Banana everywhere. Lesson learned, with banana leave the cover loose for the first 24 hours.
I checked on it this morning and it is still working. Any suggestions?

I think you answered it with the loose lid! What was the whole recipe that you are using with the bananas as most fruits have sugar already and an average banana is 14g. so I am wondering how much if any you added?KDS111 wrote:I use a 6.5 gallon plastic bucket, no petcock on the bottom. Re: what are you fermenting in?
9 lbs of bananas 2 lbs of brown sugar, 1/4 cup of cornmeal, yeast nutrient, acid blend and D 47 yeast.
In 5 gallons of water. Is this common with the D 47 yeast? With 1118 I never had a lid blow off, also using different fruit.

Those easy to use 30 liter see through fermenters. With fish tank heaters for the right temp.

Re: what are you fermenting in?
A food grade trash can lid won't seal that great. So an airlock probably wouldn't work all that good anyway. It would all depend on how well it would seal.

I only use the glass carboys for secondary's for wine and at one point I used one as a boiler. All my primarys are foodgrade buckets.jebar77 wrote:first off i want to say i am not afraid of some work, that being said.
i am on mash number 3 for me. i am using nchoochs burbon recipe.. this is my first all grain attempt. so i am fermenting in a 6 gal glass carboy. getting all the grain in the jug was anything but easy... so i am wondering if there is a trick to this that im missing.... i got it all in there but the opening to the bottle is so dam small.... any thoughts....?

Re: what are you fermenting in?
I've got a Brute 208 L (55 gal) trash can that I've not yet used. I'm waiting until I'm confident enough in my skills and happy enough with a recipe before making that quantity of anything. Until then I have two 62L primary fermenters and four 23L glass secondary fermenters. When I start using the Brute to ferment on the grain, the 62L pails will become my secondaries and then the glass carboys will go back to making and aging wine.
Having fun and great success sprouting/roasting/smoking my own malted barley
I brew in 50L batches using local natural spring water and fresh baker's yeast
8 Gallon SS Reflux Still for neutral & 20 Gallon Copper Pot Still for everything else
