I finally got my membership card to restaraunt depo and was walking arround doing some price checking and i came across evaporated cane juice in 50lb bags for $36. Is this stuff of any use to us? How does it compare to sugar?
I used to have super powers until my therapist took them away.

Guessing here that it is raw (unrefined) sugar?

Sugar is cheaper in most places, even here where it is super high.

It's the same useability as refined sugar (99.5% sucrose). It has a better flavor to it and has trace minerals so there is no need to add nutrients to a sugar wash when using ECJ/demerara sugar
I run a small (legal) distillery and I advocate the decriminalization of home distillation. I believe there should be a competency test for distillation (similar to teaching or welding). I also advocate a competency test for parenthood. wear a condom.

If it is at all "granulated",,it has been through the centrifuge (or the like) and not at all like panela which has only water removed from the cane juice by boiling.
Granules would be an "A" strike sucrose extraction.
If it has been "ground" on the other hand from panela cakes/blocks then it is a premium product with lots of molasses (20%) notes, plenty of nutes and ample sucrose and fructose for boosting your gravity.

Unrefined sugar cane, sugar ,, wouldn't be a good start for rum ????

Better than refined.

More molasses= more rum notes
