My SSVR calls for 470-560kohm @ 2w
I understand that I look for the larger value when choosing the pot.
560k seems to be rarely used and a little hard to find. I was given a honeywell 500k for free. This means i won't reach the full on setting. Correct?
On a 5500w 240v is that a concern or will that missing 60k make a major difference.
Is there a different inexpensive solution?
I do know that im not concerned about low or off. I'll just unplug to get there.

A 500k ohm Honeywell pot will work fine.
Pot's and resisters have a tolerance rating. In other words it may be +/- a percentage of what the stated value is.
So a 500k 10% tolerance resister may be anything from 450k to 550k.
If the max resistance is too low your controller may not go all the way to zero watts.
Also the input of the ssvr has the same tolarances. Put it together and give it a try.

SSVR gives a full power to a load when.pot resistance is zero. So you can get max using absolutely any pot. And SSVR shuts power when resistance is around 400K.
