I have spent many evening and free time reading the forums, and what you all have posted/commented. But I have come across a couple questions that I can seem to find the answer for and would appreciate if you could answer them for me or point me in the proper direction.
And to be honest I may have read the answers somewhere previously before I had these question, and just forgot that I have read them.
1. Why do you want to do your first run with a lower abv 5-12% than a high 13-20% wash?
2. Why is s second run done at 40% or under?

You generally want your wash under 12% ABV because forcing the yeast to live in an environment with higher ABV than that stresses them and causes them to produce off flavors. 40% for spirit run is for safety. High ABV + boiling temps = a bad day.
