I've never once made a cane spirit that I could personally drink with only a single distillation. Blanik talked about it and I did try. But I couldn't get it. Also, rested for a month or two was just not enough time for the rum to round out well enough. Never even mind straight off of the still.
3 or 4 years ago there was a Brazilian group of distillers that came over as guests for the Miami Renaissance Rum Festival. I got a chance to talk with one of the old gentleman distillers. As I recall, he does dilute his juice to about 7 brix ( I think? ). He starts a very small volume in his 400L fermenter, then step feeds the juice and is able to ferment the entire 400L volume to dry with 24 hours.
Minimal stress on his yeast by diluting and step feeding so says he.
His cachaca was very very good. Maybe not the best offering there from the Brazilians? But very delicious none the less. I'd throw all of the domestic rum in the ocean for Brazilian cachaca.

You may find through out your stay that there may not be the kind of product knowledge you are hoping for. Knowledgeable spirits enthusiasts (and industry professionals here) are far and few in between. Some care, but most don't. at times even the service in general can be lacking because of the shear volume of sales. They'll just never run out of business,,, if you see my meaning?
But there is definitely people here that know stuff and also understand the history of Florida bootlegging.
I'm sure those folks that you end up talking and drinking with will appreciate and enjoy your perspective of evaluating rum from the inside out first, rather than outside in.
