Spicy Safale s-04

Last night I distilled a single malt AG mash that used Golden Promise as the grain and safale s-04 as the converting yeast. Although I can’t find it now, I’m sure I read somewhere that this particular yeast will produce some spiciness. I haven’t used Golden Promise or s-04 before but the spiciness is definitely present. Kind of caught me off guard. We’ll see how she shapes up around February. Assuming this isn’t some kind of aberration, me thinks s-04 would be great for a Rye.

I was sipping on an Irish Whiskey sugarhead tonight made with Golden Promise & unmalted barley. It's only 1 month on oak, but the taste is phenomenal!

I bought a 50 lb bag & had it milled. Can't wait to fire up the next 3xbuckets with Angel Yeast Yellow Label. That Golden Promise has unbelievably good flavor...

I often used S-04 for my beers but I never had a spicy flavor .... I think it depends more on malt.

I've accidentally used Safale T-58 before. Spicy with a strong black pepper note

TBH I think that’s exactly what I was looking at and got the two cornfused. After tasting this run again I thinks it’s the apple and grape brandy I been running recently that’s giving me the funky flavors in this AG run.

Yeah I use S-04 and it's maybe a bit bready at bad temperatures, but definitely not spicy.
