INDIAN HEAD CORN MEAL WHISKEY
anyone ever tried this recipe that is all over the internet?:
It doesn't call for hot water when mixing........Why? ...because it has malt? I thought about trying something similar, but using liquid malt from grocery store and regular yeast. I also notice it doesn't call for any sugar (except the malt). Does this seem workable? I know the liquid malt would give me a good whiskey taste - but would the corn meal bring in a corn taste like it seems it would? OR am I playing with fire since I am using no sugar and am very new at this?
INDIAN HEAD CORN MEAL WHISKEY
Ingredients: 3 Lbs of Indian-Head corn meal
1 1/2- lbs dry malt preferably dark (available at most home-brew shops)
1- sachet of 48 turbo yeast
4- gallons of spring water
After cleaning the equipment to prep it for use, put 3 1/2 gallons of water into the carboy
and then slowly add the cornmeal allowing it to wet as it falls to the bottom and thus avoids caking as much as possible.
Carefully lift the carboy and shake it side-to-side to ensure a good mix.
Next add the dry malt like you did the cornmeal,slow and steady and then lift the carboy up and shake it again to get a good mix
Warm the 1/2 gallon of leftover water on the stove until it's just hot to the touch.
Turn off the oven and stir in the yeast until it is completely dissolved.
Now add this to the carboy and shake well.
After 3 to 7 days, it's now ready to run off in the still.

malt alone whould be about -1.5% but if you used flaked maze/corn with it you mite git at the most 4.2%
but with out converting the corn ??????? Im thinking it whould be a slow ferment. (for so little)

I'm all for trying new things but MAN, you go off the beaten path, down through the ravine, cross a couple creeks, back the other side of the holler, then you ask "does anyone know where we're at?" Use this energy to learning the craft, build a "valid" working knowledge base and grow your abilities from there. You seem to go off on one wild tangent after another. That's a hell-uv-a frustrating way to learn anything. A smart man learns from his mistakes; a wise man learns from others mistakes -- this is how the tried and true became tried and true. Good Luck and Good Stillin.

Oh God, WW you got me laughing so hard. But everything you said was the truth. Geez....you sure were talking about me exactly. I don't know if I can change. Oh yeah, I have done some crazy recipes. It is a miracle that people, especially Dnderhead, hasn't been committed to the nuthouse yet because of me. I am having lots of fun, but you're right, when I get lost after rambling around, I go to the forum and holler "I'm lost ! ". I feel sorry about that part. BUT.....you did word it perfectly. I think if I could ever find that almost perfect "Corn Likker" recipe, maybe I would stop wandering.................. on 2nd thought....No...........not me................maybe that is why they all say "His cornbread ain't quite done"

if you used about 2 lb of DME to the gallon the you'd be somewhere around 8-9% (don't quot me as I just took that off the top of my head)
(Cornbread likes to wonder out in the woods,, when he gits lost he sends up smoke signals
)
the easiest corn whould be 3/4 flaked corn.1/4 ground base malt.
for a 5gal. use about 7lb flaked corn.. add good boiling water and stir,, let it cool to 156f then add 2.5lb of ground base malt.
stir the shit out of it and let is sit until cooled to 80f add yeast.
that will make about 5.5-6% mash

witch ya gonna try? no sugar in neither one. I don't make much with sugar. I usually support my local farmers.

I'm sort of like Cornbread. I like to experiment. If I wanted to go down the straight and narrow tried and true path, I would go to the liquor store and buy some Black Label JD.

any base malt will do, domestic two or six row, is the cheapest, if ya got a choice go with six.
(Iv always ate that way , a ham or corned beef ,onions,carets potatoes maybe cabbage or greens, throw it all in a pot and let cook all day
over a nice slow fire)

Hey Cornbread, no disrespect intended. Like Dnderhead, I like some pretty unusual combinations myself. My favorite sandwich is a peanut butter (crunchy) with grape jelly, a slice of cheese and dill pickle slices.
I'm from the deep south and luv any and all southern/soul food combinations. It is just at times when you would follow up post on your latest adventure, your post had a "whoa-is-me" (think of Eyeore from Winnie-the-Pooh) sound to it. I'm not sure how much you have distilled and/or run and it seemed you would get discouraged.
It's all good if that's how you fly your plane. Your post have made for interesting reading and I'll give you credit for taking a short-cut to the "experimental" section of the forum. With what you've done, you could almost have your own sub-category within the experimental section.
ps. I like how your "boys" got your back on this one.
Have a good one and good stillin to all.

Geez...I made the long trip to the homebrew store..............$21.00 + tax for 7 lbs flaked corn !!!!!!!! I got to wait til payday. I didn't even look at the barley price.. LOL Going to try that Faux Corn Likker recipe. (no, I will not add a blueberry raspberry lollipop or any other crazy stuff this time. )

boy that's a rip off, catalog wants 1.50lb for flaked maze/corn same for malt. you got a farm store near you? they mite have

this is northern brewer 1.50 that's with shipping, did not check any others. a feed store whould be a lot cheaper but some times not cooked-as well.
hears another place Iv done business with as they have 8.$ shipping, 40-50lb of malt barley 48.+8.$ shipping comes out to just over 1.$ lb.
