anyway, im making my first batch of peach brandy, and was wondering if this was a good recipe to follow.

would you guys change anything, or add anything? and what do you do with a meat off the peaches?

Interesting recipe you have there. We wouldn't really go that way about it - although who knows? If you go to the search function (third button in either way above) you will find 558 posts (559 now) relating to peach brandy, including the use of the flesh of the peaches. not real brandy more of a liqueur.
we used to proses fruit . for canning /freezing.then used the skins for jelly etc.
I thank I would omit the pits.
dipping the fruit into boiling hot/ice water will loosen the skins so they peel off easily.
