Putting older posts here. Going to try to keep the novice forum pruned about 90 days work. The 'good' old stuff is going to be put into appropriate forums.

Am i still ok ?

Post by jace »

started ferment on my first UJSSM on 3/5. Used recommended ingredients along with Hodgens Mills bakers yeast. starting SG was 1.15. airlock started bubling next day with about 1 bubble every 4 or 5 seconds, through the week most was about a bubble every second. Today (3/10) still getting about a bouble every second. I opened fermenter and there is no foam yet but can see bubbling. I still have a hydro reading of 1.15 and the wash has a cider, little sweet taste to it. Room temperature is about 60 - 65 degree F. Is everything still going ok just a little slow ? Should i pitch another tablespoon of yeast to help things ? Thank you everyone for the help. being reading the forums pretty regular for months, trying to learn as much as I can.

Are you sure your hydrometer readings are correct???? UJSM recipe amounts should net you around 10% wash. (about 1.080). I think a 1.15 reading is near 20% !! That would explain why your yeast is struggling!! (bakers yeast only good up to about 12% or so). UJSM is 7lbs sugar, 7lbs corn, per 5 gals of water. Looks like to me you might have gotten your figures off somehow and ended up with a double load of sugar. You can try and get it going by split it half into 2 fermenters..and top each up to volume with fresh water. Then repitch your yeast in both. The problem you might have is that it may have already stressed the yeast to the point that it's ruined your wash (stress yeast can produced all kinds of nasty stuff). But, if smells ok...it might be worth a shot to water it down to something more reasonable and repitching fresh yeast.
