High ABV Aging

So I have run my first and second gen UJSM together on my plated tower. I'm pulling lots of flavor at 85%. Can I age it on oak at this level or should I just drop it to 60?

Might just keep it white. This stuff is amazing!

The standard aging proof is from 55%-62%, if your happy with it that's all that matters. Keep half white and age the other half.

Higher than 62% abv will pull excessive tannin's out of the wood, if wood is what your using.

You can also use herbs for your spirit, such as in making Gin or Absinthe. Or fruit like some Vodka's or Liquors do.

I would add that aging on oak at 82 wouldn't be a great idea from a safety standpoint - coloured up by oak - someone might make a mistake and get hurt driinkin it.
+ aging high on oak then diluting also dilutes your loverly amber colour

This is true Frozen. Coarse im the only one to access to my juice. All my other whiskeys come out at 57%abv from a pot still mode tower. I havent gotten to really do a right run till last week on the plated system. I have a good gallons worth diluted gerber barley that I will add oak to after knocking it down to 55. Ill do the same with this UJSM. Thanks for the words.

Dnderhead has posted it many times. The closer you age to 65% the spicier wood notes will come through. The closer to 50% the sweeter notes will come through. Many recommend not going over 65%.

I personaly like mine a 55%. I found 60% to Sharp for my taste. But 55% worked out real nice for my taste. But until you try different ways you will never know which is better for you.

The micro distilleries I've been to age at 55%, gotta be a reason they all use 55%.

I'm doing some faux scotch at 55% and another batch at 65% and you CAN tell the difference. The 55% is a little floral & sweet and the 65% is a little more woody & earthy. Both good and both interesting. Also, 55% is on French oak and the 65% is on American oak.
