white stuff showed up in my shine!

Post by shiner2011 »

ummm i have a weird question... i made a corn likker recipie
just using corn, sugar, and natural yeast, i cut my final product to 80 proof
i have a jar setting out on my desk and a jar in the refridgerator and both are crystal clear but the one i have in my refridgerator has developed white chunks floating around in it, the jars were clean when i filled them
and i have no clue why only the refridgerated jar has this white substance in it....
has anyone ever seen this or heard of this happening?
i wont drink it because i have no clue what this is,

That happened to the Panela rum I made, sitting out at room temp in a carboy. Soft white floaties grew in there. Lots of it. Strange as hell. Was debating straining it or just doing a spirit run. It was only run once.

Im also curious what this is. LWTCS or PrairiePiss, have you seen this? They're very light and soft, float slowly to the bottom but stir right back up on any movement.

Hey Jimbo, ever figure out the culprit? I found one in some of my panela (run twice). Would filter out just fine, but curious what it might be and whether there is cause for concern. I'm sure I might just have dug in teh tails a little maybe, but didn't know if this is something special to panela.

I've had "snowflakes"develop in rum tails that I'm saving up for a all faints run I read somewhere this is normal in tails and since rum has some tails usually blended in for flavor is imagine its possible to get it in tour heart cut if you blended tails in for flavor.but I've been known to be wrong before lol.

I ran the rum again to get rid of it, and its stored at 77% now and hasnt come back. My wife prefers the 2nd run better anyway (cleaner) so all is well.

Tails are rich in fusel oils, which cause unwanted tastes in your product. Some times you can see an oily film on top of the collected tails. Some parts of the tails, if left for a day or so, will start to develop floating crystalline... things. This is all highly undesirable in your product.

The stuff I had growing in mine was in the keep cut, and it was really soft fluffy white things floating around, different shapes, up to an inch or more across. They settle but touch the carboy and they stir right back up again. Very odd. Anyway, the spirit run got rid of em.

Tails came over in the hearts on the first run. You got better separation on the second.

So is it something that grows, feeding on the tails? Or is it the fusel oils and such in the tails that congeal into those masses? :?:

Jimbo i have had a fog develop in both brandy a.d whiskey after diluting even with distilled water. I blamed the water. Poured through a coffee filter and removed it. Is this the same white stuff?

It's got me curious. I'm imagining that running trough a coffee filter will only get them out temporarily as the oils are still there, but I might try anyway. I like the flavor it has and I'm afraid to run it through again. My floaties are only like 1 mm long, and only one or two at that. Don't notice it unless I inspect the jar closely.

I can't say that I have ever seen this. In a distilled spirit. I have seen it after I have mixed other ingredients in with a distilled spirit. Like Apple pie. Even had some come off some oak one time. I took it as I had tails in it that congealed with something in the other ingredients. I had an Apple pie that it would form as quick as I could filter it out. Bugged the crap out of me. And I couldn't drink it.

Its the weirdest stuff. Really soft and fluffy masses. Like flemballs, but much lighter. Its only every happened in a Panela Rum, single run. I did make pretty wide cuts on that one, because it tasted good wide. Hell, even the panela wash tasted great and I was tempted to keg some up and carbonate it. LOL I think I mentioned that in the panela post.

I have some panela clearing to bottle as wine.
I haven't seen it in my panela rum. Mine is clear as a bell. But I make very tight cuts.
