NUTRIENTS

hey guys.my rum washes have been working out well.great stuff.havnt bought rum in a very long time.my question is,after I transfer the wash into the boiler could I add a pre mixed wash minus the yeast and nutrients right into whats left in the fermenter?would whats left in the fermenter have any live yeast to start up again and would that also be good nutrients for the fresh wash?thanks.

I'm sure there's live yeast left but if your last batch was 8% abv or more I wouldn't use it. Yeast become weakened and damaged when exposed to alcohol at that level.

That's how I run my panela rum. I melt the panela for the next batch in the backset. And add some water to the fermenter. Before I add the hot mix. So the hot mix doesn't kill off the yeast.

Now I run 100% panela. And panela has all the nutrients needed. For a good ferment. If you are using refined brown sugar, white sugar, and or molasses. You will need to add needed nutrients. How much? That will depend on what you are using.

And I only ferment to 8% ABV. But I wouldn't worry to much about it. As many people make multiple generations of UJSSM as high as 12%. Without much if any problems.

Ive been doing this for a while too, I collect lees and about 500ml of wash from multipe ferments of molasses, raw sugar and white sugar in a small drum, I then use around 2L lees in new rum batches. Its so much tastier than a straight wash!. Ive never used nutrients and never had a failed rum. I will be reducing the amount of yeast I put in with the lees wash just to get an idea of how much is left in the lees.

thanks for the replies.if the lees are mostly dead yeast I was thinking that if I add fresh wash to it maybe I only have to add some yeast.ive read here that dead yeast are good nutrients.one less step and maybe some added flavor.only one way to find out I guess.my last two washes ive cut my yeast back from 24 grams to 8 grams and switched from hard tap water to bottled water.they are working off better than any previous.it would be nice to cut a week or so off the ferment time.previous washes were taking 30 days.also this time I used a muti vitamin instead of tomato paste.if they finish faster it will be hard to tell why since ive changed 3 different things.i guess a guy should only change one thing at a time if he wants to pinpoint the improvement.as long as its a little faster and tastes the same ill be happy.

It's not just dead yeast. There are some live ones in there. And the dead ones may provide some nutrients. Is it everything needed? Hard to say. If you have the multi vitamins around. I would add what ever you added to begin with.
