I tried to search this question but I keep getting an error that the words are to common to search.
My question is, where I live the temps in the summer can easily climb well over 100F and I do not have air conditioning so my mash will be fermenting in these temps. Is there any yeast that will tolerate temps that high or am I going to be restricted to running only when our temps are below 95?

Most yeasts will survive at 100F, proofing temp is 105 on most i believe. They'll work faster too. Problem is that they will be stressed and create undesirable compounds, making less good stuff from the sugar. If you have a basement or somewhere cooler to ferment that would be better. If you have access to running water a wort chiller might be used lower the daytime fermenter temps.
1118 can survive at 100' it is also know for producing the least amount of off flavors at any temp.

I would be looking at a way to chill or cool the fermenters. Instead of trying to ferment so high.
Something as simple as it sitting in a tub of water. With towels draped over the fermenter into the water. And a fan blowing on it. Placed in a shaded cooler area.
And DADY distillers active dry yeast. Likes higher temps. But still not quite that high.

Thanks for the info. I guess I will try and use a washtub full of water and throw in some froze water bottles to keep it cool through the day. No basements here or running water. I have seen temps in the house climb to 110 in the daytime. Luckily not all the time, but enough days to put a hurt on yeast.

Bakers and Distillers yeast tolerates higher temps, 80's. Dont even think of using a beer yeast or wine yeast at them temps. recommendations below are good. If you dont have a spot that stays cooler in your house you might consider digging a tiny little 'celler' couple feet deep, on the north side of your house where the sun doesnt hit (or south side I guess if youre in Oz). Throw a 4x4 sheet of some heavy plywood over it. Earth should keep it much much cooler.
