I started a 1st gen UJSSM yesterday. When it finishes fermenting, I would like to cool it to clear it. Does anybody do this?
I'm using BSG distillers yeast. What would be a safe temp to lower to put yeast to sleep, but not kill em ?
Can these yeast withstand freezing? Muddog

Few yeasts can withstand freezing without special attention. If you want to reuse the yeast you can harvest it prior to freezing.

I'm used to brewing beer. After fermentation is done, I'll drop the temp of the wort to 45F and let it settle for 12 hrs, then transfer to boiler.
I don't reuse beer yeast, so I don't know the effect this has on the yeast.
So, it will clear on it's own ? No need to chill ? Thanks, Muddog

chilling just like beer will clear faster but time works too. If you do chill it will take longer to heat up in the boiler so pick your loss.
cool idea with the side by side fridge. Is the left a freezer (temp controlled)?
for what it's worth I've never seen UJ not clear quickly on its own. But my idea of quick may not be anothers'

You see 2 temp controls on top, 1 for ferment and 1 for keg box. Muddog

I call this crash chilling, but I brew a lot of beer. If you plan on one ferment only then do the whole lot. Otherwise you could rack the beer you have in to another container and then crash chill it, even to around freezing since you wouldn't be worried about the yeast surviving at this point.

If I was going to reuse the yeast for a second generation. Like a UJSSM recipe. I would just let it clear on its own. No crash cooling.
Why you ask. Simple less stress on the yeast. And faster work times. If you crash it. The temp drop will stress them a little. But not as much as the warming back up. To the temp you need it for when you add the backset and sugar for the second generation. Which will be at an even higher temp. So now your waiting longer to add the ingredient for the second generation.
It should clear good on its own. At room temps in approx 2 days. If not. It wasn't finished.
