Hello,

I have been calling around some brewshops looking for Amylase but, they seem to be all out. At one shop they told me to use pecklase as it is the same thing. I tried to look it up online but can't find anything. The only thing i found was Pectinass...

Is Pecklase the right name?

I would like to read up on it before i drive at the way up there to get it

Sounds like someone making a name up for pectic enzymes. Those are used for wine making. It's an enzymes that breaks down the cellular walls of fruit. Not what you want for grain brewing.

Sounds like you talked to a wine maker not a beer brewer. I've seen employees at the local hbs that don't brew beer. Give some bad advice. Because all they know is wine making. And seen beer brewers give bad wine advice. Because they only know beer.

But I could be wrong.

I think PP is right on with the pectin enzymes, what would adding them do to help get all the available sugars,anything? Would it cause more fores n heads as I think I've read before? With fruiting season on and coming might be worth an experimental batch.

I remember someone here saying they would cause more fores. If used. I can't remember who it was? Dnderhead or goose? Maybe even someone else? I think it was in my mulberry thread? Might have a look through it if you want?
