TIME for barrel aging......??

Post by StillCopper »

Won't ask about the temp ideas, saw that on another thread.
Outside, in machine shed storage, open air.
I'm in midwest, 100s summer, zero in winter. Temp swing many times range in the 30-40 degree swing. In fact, 70f day or so, then 25f for few days/nights has been normal.
Barrels are all 5gal, charred bourbon, used 6-8 months for the bourbon.

Given those variables, what's your ideas on length of time for brandy and rum?
Various proofs.

Input please :) :)

I went through this, so here's my story.
I bought 2 barrels, one a 5 gallon Balcones and the other from Woodinville Whiskey.
The WW was an 8 gallon Black swan barrel.
I put my rum in the 8 gallon and my scotch in the Balcones.
In 6 months the rum was very drinkable, in 12 months it was great.
The Scotch wasn't real good at 6 months but is fabulous at 12 months.

Time and Oak will sort it out.
