Any enzyme that catalyzes the hydrolysis of fats (lipids). Lipase in yeast is used in the growth phase to break down fats from other yeast cells to build up it own supply of lipids to build cell walls. When a yeast cell dies the lipase can live on and contribute to autolysis to break down its own cell wall lipids. This will lead to the contents of the yeast cell being freed and being used as nutrients by other yeast cells.
