During double distillation, the spirit still is used to run low wines, which results in a higher proof, palatable spirit.
Generally the spirit still is a pot still which is used after the low wines still, since column stills are more efficient and therefore require only one run. However, it is possible to accumulate low wines and run a charge through a column still.
