High PH

I'm doing a quick sugar wash W/tubo yeast in a 15 gal keg. The tubo says not to use hard water but I've never had any trouble with that, has anhyone else? my PH is aways in the 7's after I added 40lbs of sugar It jumped past 8 I was told by a brewshop to add citric acid to bring it down in the 5's. Should I do anything about the hard water?
I hope that I feel better when I'm ridin' in that hearse.

Try a comparison. Two identical batches side by side, except in one the pH is left high, and in the other it is pulled down. See if it makes any difference.

I use cheap lemon juice concentrate that comes in glass bottles and those plastic lemons to bring my pH down... It's cheaper than straight citric acid, cream of tartar, or whole fresh lemons, around here...

I do the same as rad. It works great. I've noticed it make a difference in how vigorous my ferments go.

It didn't take too much juice to get me in the 5's...Thanks guys.

I wouldn't rush to bring the ph down. The Brewstore may be thinking of Bakers yeast where you need to drop the ph, or confused with beer (mash ideally at about ph5.2)
The Turbo manufacturer should have buffered and adjusted the package to provide the correct ph to suit the yeast. Try it before getting too carried away with adjustments.
