Specific Gravity Question
Hello, I am new to this so bear with me. I've done lots of reading but I'm still a lil unsure of some things. I made my first sugar mash with a 20% Turbo Yeast (the sachet had the yeast and the nutrients all together). I followed the directions on the yeast sachet and used 18lbs. of sugar topped up to 25 Liters with water and I added the yeast after it was cooled down enough. My initial S.G. was 1.122. The yeast sachet said to wait 10-14 days at between 66-73 degrees F. I keep my mash in a room that stays at about 68 degrees F. Today is the 14th day so I opened up the fermenter and checked the S.G. and it is 1.010. Using the equation on the parent site (Starting S.G. - Final S.G. x 129 = % alcohol) heres what I got. 1.122 - 1.010 x 129 = 14.448. So my question is do I let it ferment more until it gets between .980 and .990 like Ive read so much about, or can I go ahead and distill it with my S.G. at 1.010? Thanks for any help.

Howdy and welcome.
First, unless you are making fuel ethanol, it is better not to go above 10-12 %. Any higher and you start getting off tastes from stressed yeast. Lower % ferments are also much faster to finish. You can make 2-3 in the time it takes a very high % to finish off completely.
Second, taste your ferment, if it still has some sweetness (and is still bubbling) then it is not finished.

Thanks. I guess Ill consider this a learning experiance. The airlock is still bubbling very slowly. I also noticed that there is no yeast cake or sediment at the bottom like I was expecting. Ill let it do its thing for a couple more days and check it again. Im planning on using a 2 part clearing agent when its done fermenting. I'm just getting impatient, haha. Ive been waiting for 2 weeks and Im really excited to try my still. Ill use a lower % turbo yeast next time for sure.

Welcome to the forums, Wormy...
If you're patient, and wait long enough, the yeast should fall to the bottom after fermentation is complete... Some turbo yeastferments don't drop their yeast without a clearing agent, however... All yeasts don't create a cake, cap, or kraeusen, but that's nothing to be concerned with as long as your airlock is active...
