mixed bag today. got in to looking at whats been aging while I stripped a rum wash tonight. as I'm not that far into my distilling career I'm still experimenting with things to see what I like.
Sampled some spiced rum that i'm not really happy with. It was a VERY heavy rum to start with, and with the spices as well its just too much. back into the rum feints jar it goes, but I'm wiser for it. I think I'm starting to settle on what I like to do with rums: oak the heavy, spice and caramel the mediums, and leave the light stuff in the white (although the coconut experiment on the light stuff smells realllllly good).
My (heavy) rum on charred apple wood has taken on a wonderful aroma and colour, but the taste isn't quite there. hoping it will improve, its only had a month and a half and the sticks aren't very thin.
my DWWG on toasted manuka is looking and smelling really good as well. mmmm manuka. I'm thinking I might finish it off with a touch of manuka honey, its really really dry at the moment.
Then I went to leave the shed, and tripped up, knocking over a 5l glass jar filled with nice vodka that was destined for schnapps and panty dropper experiments
Bugger. That'll teach me for using extension cords.
