I'm Henk Stuurman, new on the forum. Hereby a little introduction
I'm dutch (excuse me for incorrect spelling), and over here having a stil is elegal. Still there are e few dutchmen who love this hobby.
Normaly I make jenever, using a pot still, made from a pressure cooker. Two type's , a clean version and one aged on oak. Last summer I made a "bird cherry brandy" great taste witH a slide of almond. Most of the jenever is made from simpel sugar wash and turbo-yeast.
I strip this in a type off bucketstill, only the heating element is discharged for a copper-spiral, in which hot water (50 C) is circuleted.
I'm making plans for builiding a new still, 20 liter boiler, with a removabel collum. The collum must be equel to the "ponu still". This for creating the clean stuff, and an apart head for conecting a liebig cooler, to have a simpel pot still.

welcome aboard the forum. What is jenever? I have never heard of that.

Jenever (or Genever) is the proud of the Dutch (and the Flemisch Belgian) equel to Gin. Gin is the English conversion of genever!!
The Dutch and the Belgians both claim the invintion.
There are several type's, you cab use clean sugar wash, distill it 3 or 4 times in a pot still (to make it as clean as wodka), take a small amound of this alcohol in your still, and hang a basket in the top filled with some herbs, but manly juniper.
The other type is made from grains, equel amounts of barley, rye and wheat. Mash it, don't strain but pooor the yeast in the mash.When the yeasting is finished, strain and distill, 3 to 4 times. The rest is equel to the sugar-based-version
