2nd Cap run....
1st gen UJSSM. (yeah, it's not the one I had been running earlier, but this was more of a trial base line). I wanted to see how the still would preform keeping the delph settings constant. For this run I adjusted the delph and hit the sweet spots right away, so just left it run until she was finished.
This specific batch had been fermented dry by Dec 2, but I had been to busy with finals and graduation to run it so it had been sitting finished for month. I have ran UJSSN before, once on my twins, once on my a pot still, but on
this time I got a flavor that I haven't experienced before, like a band-aid or peaty-ness falvor in scorch, What does that mean?
ABV vs time
take off rate about 5th/h
8:00 I loaded up the still with 7-8 gallons of UJSSM first generation.
8:41 Started full reflux
9:15 90% started to remove fore-shots drop-wise. With the new liebig configuration the take off rate slowly ramped itself up and about the time the Juicy-Fruit gum flavor was coming out the take off was a little too fast, readjusted to previous full reflux setting and take off rate was perfect. (the water going into the delph goes through the liebig and is pre-warmed. The end result for me is more efficient use of water but that's for another post)
9:37 90% 1c foreshots collected, switched to heads collection, turned down delph as described above to just barely a continuous stream.
9:53 89% early Hearts. Clean tasting switched to Collection jar. (750mL vol)
9:59 88% slight Band-aid flavor comming through, otherwise clean tasting
10:02 87% scotchy Band-aid flavor more pronounced, but not overwhelming, definitly not typical tails wet cardboard taste. Take off quick broken stream
10:07 86% take off starting to slow down moderate broken stream
10:21. 86% band-aid flavor gone completly. distillate clean again. takeoff rate further reduced, fast dropwise. switched to collection jar 3 (750mL vol)
10:42 86.5% ABV increase ? wtf? take of very slow drips(~2drips/3sec), like removing fore-shots speed. Started to get first sign of tails.
10:46 86.75 % further increase, take of 1drop/sec. still just hint of tails.
11:00 complete reflux reinstated
11:10 88% collection resumed. Clean tasting, Take off 2-3 drops per second.
11:20 Bored. Turned delph off
After turning the delph off the ABV dropped to 29% in 10 minutes and a little over half of a fifth of the nastiest smellyiest tails came streaming out

total: about 3L collected (including fore-shots, heads and tails). about 1500ml (two fifths) will probably be drinkable! (if that scotchy band-aid smell doesn't ruin it. I suspect it's from fermenting on the grain for so long.)
In short, great compression, but I hoped that the ABV would of been more steady though, but still a good configuration. I'll have to try this with something more flavorful like a 5th gen UJSSM or a rum. I suspect that these caps might be better for people trying to achieve a more flavorful product, but I still need to run it a few more times to make a real judgement call on that.

update: after airing for two nights that band-aid flavor has changed to more of a dusty grain flavor.
