how do i use this to get a good mash?
or what is the best way to use it?

not quite sure how you would calculate the quantity of grain needed for conversion , but I'd be inclined to mix 50/50 with a good 2-row (crushed) malted barley and whip up an award winning Vodka ....know what I'm sayin ?

Hmm, okay.. I have never used potato starch for anything, so i'm totaly new with this.
Is there any special way to mix this up?

You need to research All Grain Mashing, that's basically what you will be doing here. Using malt enzymes to convert the starch into sugar. You can use the enzymes from malted grains of any type(2 row malt, 6 row malt, wheat malt) or buy enzymes in powdered form to convert the starch by itself. Not knowing the yield on potato starch I'd say also grab a beer hydrometer so you can test the Specific Gravity of the wrot/wash before you start fermenting.
It's going to go something like this, heat water, put in starch and crushed grain, the heated grain will release the enzymes, the enzymes will convert the starch(of the grain and potato) into sugar, cool & add yeast to ferment. Sounds easy but it's actually not that easy for a first timer.

I'd start out on a small scale at first and try something like this:
measure out
8 pounds of the potato starch
4 pounds of a 2-row malted barley (crushed)
5.5 gallons of water
Combine in a BOP, stir well, and slowly heat up to 148f ...then cut the heat and try and maintain that temp (+/- 2f) for 60 mins. at the end of 60 minutes, it should be nice n sweet ....cool to 80f, measure the SG.... pitch a mild yeast. let it ferment for 10 days.

anyway, ferment on the grain, and strain out the grain when it's finished ... might wanna let it clear for a couple days and then rack it to the boiler and run it .

Hmm.... Going through the local job lot, I came across corn meal, potato starch and barley. I think these were 1lb plus bags, I saw the potato starch one and wondered the possibilities....
I should finish one thing at a time I guess.
