Do it Jed, sounds like an interesting experiment. We had a discussion at woodshedfest about intentional infections after sampling Robb's whiskey. It had a pronounced butterscotch flavor, which is a result of diacetyl. Not neccesarily an infection, but product of fermentation when the conditions are wrong (right? ha). It was delicious! And we we're discussion how to duplicate that. :)
Only problem it its my wild yeast ferment. Guess ill have ro do the same bill using bakers to compare aganst. What a pitty gotta do another ferment.

Jed, I have an ujssm that has been sitting for 6 months in the corner that has a clean smelling lacto infection. I was thinking of collecting some of it for future use in a sanitary jar. I can get some for you, if you like.

And it begins. Stripping 40 gallons of malted corn, malted white wheat and rye 10 gallons at a time. Just put the cork in the steamer on first go.

How did you go Jedneck. I have my still in my cramped garage and it is propane powered. Usually get a headache after about 3 hours. I think it is lack of oxygen combined with tasting distillate and sitting forward with my eyes glued of the output...

You know, I recently saw an antique piece of farm equipment that does just what you're doing with your hands. Just stick an ear of dried corn in and turn a big flywheel crank - boom, it's done. When I see things like that, I want to buy it and take it home even though I might never use it, but I would have it if ever I found myself in your situation.

Someone just posted a pic of a "corn shucker" yesterday... A portable one without the flywheel... Spent many an hour cranking the flywheel type to shuck bushel after bushel of dried corn... But those were nothing compared to the Allis Chalmers Gleaner combines I used to service and operate... I could give you 225 bushels in just a few minutes...

Mrs. Jedneck acually showed some interest tonite. I was mashing an all malt wheated bourbon and she was right there with me. In the almost 17 years we have been married, she has only been snockered drunk 2x. Not a real big drinker she might have a drink every other 5 months but I will find something she likes.

You did that too :wtf: That places you on nearly the same lowlife plane that I grew up in .

My son (28?) hasn't been told about my hobby. He knows about the wine and cider and plans for beer but he never gets a bottle of home made hard stuff because he has a big mouth and a habit of pissing girlfriends off after a year or two. His last girlfriend's grandfather had a still and I heard all about it. I would have liked to chat with him about it but never met him. Grandpa never found out about mine though because you never know what a pissed off ex-girlfriend might do.
