Re: Cornflakes whiskey
iv been using maze recently i have brought myself whole feed corn and i have made it a really gritty flour to try and give up more taste iv just been doing a boil to geletanise the starch then throwing that in fermentor with sugar to get me around 10% also add a 1kg can of malt extract from coles $8 and that makes a really nice drink looking forward to getting my whisky from making more of a powder from the corn but that has about 3 days till i run through the still then several weeks to 2 months of oaking till it hits my glasselektrosport wrote:Odin, have you tried the flaked maize you get from the homebrew shops, if so, how do they compare to cornflakes?
I was thinking about getting some cracked feed corn for some AG but if flavour is inferior I can't be bothered.
Cheers,
El Sporto
Re: Cornflakes whiskey
sorry to post a few posts why don't you try frozen corn that may have more flavor just another idea for you or different brand of the feed stock hear in Australia alot of the places break down the bags into a few kg's and they are cheap but our feed corn is good enough to re hydrate and eat ourselves i guess im lucky but try a few brands of the feed stock id say even call around and ask what they have see what you can tryOdin wrote:Sporto,
I live in Europe, my problem is all the flaked grains is feed quality with less taste. I upgrade to cornflakes because they are the real sweet thing. In the US maybe the flaked corn is sweet and if so, go ahead and do it!
For more taste: cook the flakes and up the amount.
Go get them, guys!

Yes well I suppose I forgot to include the blending..I'm used to reflux still but will use my boka in pot mode on a cornflake recipe.
Re: Cornflakes whiskey
Got 2 six gal batches of this going but I used 5 cups crushed cornflakes, 5 cups crushed Cheerios,a gallon of UJ backins, 9 lbs sugar and a teaspoon yeast nutrient in each bucket. SG 1.080 should yield about 11%. Gonna strip both and then discard the lees and add just cornflakes for second gen with 25% cornflake/Cheerios backins, strip it and do a low wines spirit run. I'm very interested in the cornflakes flavor y'all are talkin about. Thanks for the recipe Odin!

Re: Cornflakes whiskey
I would distill with part of the grains in and not bother with cleaning up the wash.
The longer and the more the liquids are in contact with the grain (or corn flakes), the more taste will transfer.

Re: Cornflakes whiskey
Ok Odin you've mesmerised me with this faux whiskey...I've always wanted to try one but couldn't be bothered with all the grain stuff so Cornflakes here I come.
I currently use a version of rads All Bran with much success and now I'm going to exchange the All Bran for Cornflakes....
So this will be my recipe for a 25l batch
As close to 25l water as I can fit
1kg Cornflakes
5kg sugar
12 Tbsp Lowan yeast
3 Tbsp DAP ( 1/2 added at start....1/2 added after 2 days)
3 Tbsp boiled yeast
1 tsp Vegemite
- is this too much sugar?
- should I put citric acid maybe 1 tsp?
- should I invert the sugar..usually I do
Thanks guys

Re: Cornflakes whiskey
A bit more flakes, a bit less sugar. Some lemon juice to lower PH. Or use some All Bran backset (20%) to start up generation 1.

Re: Cornflakes whiskey
Yeah I can get generic but all the posts here recommended Kellogg's.
We do get ripped off but what can I say..it's not a business but a hobby for me only and hobbies are for fun and cost money.
I will end up trying generic one day though

from a bit of research "corn flakes" is toasted flaked corn and malt syrup.
so maybe you can make up similar wash.

Re: Cornflakes whiskey
+1 Dunder.
With one addition. Not sure it holds in Aussie land. I started this recipe, because it is in Corn Flakes (yes, Kellogs' is the best) that we can get the right sort of corn (sweet ...) over here. All other varieties are like horse feed and just don't have enough taste.

Re: Cornflakes whiskey
" right sort of corn (sweet ...)" i don't thank its "sweet corn" I believe it processed field corn.
i have a idea it processed similar to corm meal (germ etc removed) steamed ,mixed with malt, roiled, toasted.or possibly the malt is sprayed on?
OK the malt was added as just corn was bland and was like eating cardboard,or so they says.
so I believe the taste is coming from toasting and the malt.
now you/someone could try toasting flaked corn, adding some malt .I thank it be similar.
only thing you could have more trub.

Re: Cornflakes whiskey
Funny thing is, Dunder, this recipe does bring out that sweet corn taste that's lacking in the UJ's I tried making. Not sure about the malt. Maybe it is there, maybe it is not. In the taste of the final product I do not distinguish malt.

Re: Cornflakes whiskey
here you can git the ingredients while getting a chuckle .
the "malty"flavor in some (like beer)comes from caramelized malt.
its on the box? any way the "sweetness" your talking about is from the malt..
dyed "sweet corn" taste as any other corn,it is not sweet,as the corn ripens the sugars turn to starch
the sweet corn you eat is sweet because you pick, eat before it does so(in the milk). but at that stage it could not be stored or ground.it will just mold/rot.so even if you used sweet corn it would not taste sweet.so its all about the toasting/malt/flavor enhancers/sugars.

Re: Cornflakes whiskey
Hey Brendan. Na shopped at Coles. I might try the liquid malt.
Personally I've had their generic brand and they do taste diff. Maybe it is the malt they put in... Gee look at us food critics now.
Can someone comment on whether I should drop the sugar to 4kg and how much lemon juice ( ill use citric acid as I have it)
Thanks
