Been following your progress . My guess is more apple concentrate in the thumper and then dilute to drinking strength with fresh apple concentrate . WAG until I try it this winter .

This time I'm going to do it straight up panty dropper style. I have a few quarts in the freezer with sliced apples that I picked off the tree, a cinnamon stick, and a small box of raisins. I'm starting up a bourbon run now, and gonna use the back set with the fixins' to do a sugar head (ala Jimbo). That will be my base.

I may have to watch the cinnamon stick. But I'm hoping to not use any sugar. Well see how it goes. Last year's was way too sweet.

I'll be having a mixed drink using some of the 95% neutral spirits I ran off today, diluted down to 80 proof... Far better than the store bought we've been drinking due to my being too busy/lazy to reflux some Birdwatchers pot stripped low wines... Half done, half to go...

My Son and opened a bottle of Redbreast 12 and smoked a couple of fine ISOM cigars to celebrate the birth of his second Son. He came several days early, and was still over 10 1/2 pounds.

thought I'd treat myself to a descent Whiskey since i don't by much these days.
Picked up a bottle of Chivas Regal, was really looking forward to have some as I haven't really had any since my adolescents, I was very disappointed... :(
I was expecting a high quality blended Whiskey, but instead got a bland one with quick finish, too smooth, no character.

spend your money elswhere would be my advice.

What is everyone drinking?

Post by raketemensch »

My first batch of All Bran hit a month today, so I diluted it to 40% and gave it a shot -- it was run too soon, so is kinda hot, but it's been sitting with some JD chips and a vanilla bean for most of that month.

It's no longer unpleasant :) I still wouldn't pay money for it, but I can't wait to see what it tastes like at Christmas.

Double-posting!

That batch I mentioned up above -- it's been worrying me, as I put all this time and effort into learning and making, because it still tastes kinda nasty. Like, not horrible, but not *good* either.

Tonight I was thinking about taking my other jar, run a week later and with tighter cuts, and doing an experiment with diluting it with some mango nectar that I have here. It's been rough smelling, but I thought maybe I could fix it.

I gave it a taste before the experiment, and holy shit -- THIS is why you people do this. Oh my god it was good. Young, for sure, but clean, tasty, and with a bit of complexity, especially for being 1.5 months old.

Not that I was shaky or giving up, but damn, this is motivational.

Downing some ... well, Bourbon I guess. 100% corn. Aged on Am. white oak. Made only weeks ago. Still needs like a few months, but the potential is there. Nice corn flavour. Vanilins on the back ground.

Fresh pressed apple cider, ginger liquor and vodka. I think I'll call it ... "Whooahhh The Carpet Matches the Drapes". Ok its a little long for a drink name. Open to suggestions here. Its damn fine, recommend any of ya's who tried my ginger liquor recipe give it a try. How about "Eve was a Ginger",.... you know, who bit the apple.... OK, I quit.

That's funny Jimbo, I like the name the carpet matches the drapes. I'm sitting here going through some very dull but necessary paperwork and just got inspired to give my very young grape brandy a try. It's been on a stick of apple wood for maybe 2 weeks but the wood is doing wonders for it. Very nice stuff if I do say so myself. Now back to paperwork.

My rye bread whiskey gets better and better now that I was able to give it some rest. Jerushalem Artichoke Vodka is a winner. If only I can find someone to do the mashing for me ...
