I prefer older models now, maintenance might be regular, but simpler, I can handle the horsepower (just), and the crumple zones are solid, not fake plastic heh heh ;) Truth be told I think I'm at the point now that I would be lucky to get an part exchange let alone an upgrade. same boat here 🤣🤣

Since "interesting" whisk(e)y is the possible aim, if the yeast is still in healthy activity you could try adding a thick mash of fully converted speciality grains of choice to increase flavour and potential abv a bit - biab could do the trick. It's not unusal to get a good footing/krausen...

If its not specifically a brandy you're after then a masceration with netral and some sugar (optional) makes a nice feijoa surprise.

Rocket stoves have much potential and worth investigating, can be communal or individual, and easier for the locals to take ownership of than more complex processes.
