Fermenting for a single malt whiskey at the moment. Its moving a little slow because its cold outside. Gunna use the spent mash for a sugar head afterwards. Waiting in a delivery of apples to do a brandy as well.

I've dispatched and butchered a few lambs in my day. Although I used to raise pigs, i've only watched a pig being done. Would love to get back into next year for myself.

For blended Irish whiskey I have never tasted better than Middleton, in fact it remains the. Best Irish whiskey I have Evette tasted but as a blend would be near impossible to clone middleton distillery make a huge percentage of all irish whiskey. I don't think I waged anything because I brew how i cook, off the cuff. It went good! Tastes.. christmassy. it didn't ferment completely dry though. Maybe not enough nutrients for the yeast i think. Came out about 11 percent. I definitely recommend it. lovely taste.

Good home brew is frequently 8-12%. Yup! rarely have any turn out under 8%. except my cider which is usually about 5 or 6%. Traditionally malted oats were used in poitin (irish moonshine) Equal weights barley and oats were sprouted in a creek or bog ditch, then kiln dried with a turf fire.
