in that case i'm fermenting the same amount of alcohol faster in more water...than stripping the same amount of low wines... everything happen's in much less time...

seems like i can take a scoop of the cream colored top layer of yeast... discard the rest of the yeast and turb...use that space for more water/wash... and keep going forward from there with the lees starting to pile back up.....
