Digging Around In the Kitchen(Recipe help?)

Post by Fire Water »

I just got the itch to make a wash this afternoon, preferably a neutral wash. I was digging around,
Here's what I have:
1/2 jar corn syrup
1/2 jar molasses
about 8 lb sugar
1 lb honey
3/4 lb brown sugar
about 2lb rice
about 1 lb grits
1 box mashed potato's
2 lemons
I was looking to make about a 6 gal wash. I don't have any tomato paste or a multi-vitamin (Nutrients) I use distillers yeast with no nutrients.
Anyone have any Ideas? I dug through all the recipes and I'm thinking I may have to make a run to the supermarket tomorrow.
Thanks to all for any suggestions.

boil the rice / grits for nutrients, add all the sugarish products. probably a waste to add the honey though. should make a passable neutral? have you a column or a pot?

should be all good then. actually, might want to add the juice of a lemon to that stuff. make sure you give it a good long boil.

I'm always a fan of 'all of it' :) if it has excess nutrients, you can always use 100% backset with more sugar and run it again

True, I'll measure everything, ferment it, and repost the results. Thanks for the help.

Ok here is how it all went down.
6 gal carbouy wash

Ingredients
2 1/2 gal warm water
5 Lb granulated cane sugar
3/4 cup unsulphured molasses
1 cup light corn syrup
1 cup firmly packed light brown sugar
1 cup grits
2 cups long grain white rice
juice from 1 lemon
3 tbs. distillers yeast

Mixed 2 1/2 gal warm water with sugar, molasses, corn syrup, brown sugar, and lemon juice. Brought this solution up to a boil slowly stirring frequently(to avoid scorching). When I achieved boil I added rice and grits (stirring frequently). Boil this for 40 to 45 minutes.(STIR FREQUENTLY) to avoid scorching and carmelization. Remove from heat, and let the wort sit in the hot pot for 1 1/2 hours. Add solution to fermenting bucket or carbouy.Finish filling fermenter with cold water( leave enough room at the top for the addition of the yeast solution). Check temp and when ready pitch 3 tbs. distillers yeast. I usually proof the yeast in a 2 cup measuring cup with warm water and a sprinkle of sugar. (sg was 1.050) add more sugars next time .
Tips: My stove top has a range from 1 to 10 I generally put the stove on about 7 bringing the sugar solution to a boil, after 45 min I start adjusting heat up slowly to achieve boil. (stir frequently) I hang around the pot and try to keep the (wort) (mash) moving in the pot. When you add the solution to your fermenter/ carbouy aerate as necessary( a fennel, strainer or vigorious shaking will help your fermentation) I live on the top of about 5 feet of sand, so my well water is very neutral, I ought to get into the bottled water business our water is awesome out of the tap. City water may vary.

Fire Water, that recipe should ferment to dry just fine... That's quite a combination you've tossed together... Keep us posted on the progress...
