my rum is stront but its taste awful

Post by torreo »

Hi: I been distilling for a year and lately I been getting a really strong rum. My las one gave me 4 gallons of 95 volume. I try to cut it with distill water but it turns WHITE. Why? Then the taste gets awful. I'm using turbo yeast and during fermentation for 2 weeks. 50 pound os sugar, 1 gal of molasses 300 grams of turbo yeast, 20 gallons of water 8 oz lemon juice plus some vitamin b1. Want to know if its my fermentation or if I have to do something else after distill.

first cut down on the sugar, and git ride of the turbo yeast. neither one is doing you favors. your better off following one of the recipes on tried and true.
also any thing you distill should be clear,if it is colored you are doing something wrong. the color comes from aging in/on oak.
then you also need to make cuts . I hope you now about them.

Settle in and do some research. Plenty of rum topics here.

With a potential wash yield of 18+% ABV it is no wonder why you are having problems... Add to that the fact that you already have nutrients in the turbo yeast, and then toss in some molasses, and you are compounding the problem... Rum can impart off flavors and smells all by itself, without the added heat generated by the turbo yeast components... Pick a better recipe and you'll have better results... And get away from the turbo yeast yield greed... Keep your potential %ABV at or below ~14% (SG 1.092)... Most around here would suggest that number to be closer to a maximum of ~12.3% (SG 1.080)... And for Rum , even lower...

Has anyone noticed that greed really tastes bad?
Try to get too much out f a fermentation and it never goes well.

As long as the forthcoming batch works out better than the last.
