I have just completed my last pot still UJSSM 3rd stripping run and planning my first spirit run soon. I have about a qt of "middle run" (I won't use the term hearts because I still learning the taste, smell, feel method of cuts). This portion tastes better than the other and in fact IMHO isn't bad. I plan to save it back and leave it white. It is at 110 proof now and I plan to cut it with some 50 proof tails that also isn't bad. My question: For you guys who drink UJSSM in the white, what is the best proof. I read many posts here where many end up at 80 proof, but I'm wondering if this is a little "light" for white dog.
Any advice greatly appreciated.

I don't know about the "best", but if I'm keeping it to drink myself I like my white dog at 100 proof. If I'm gonna be sharing more than a snort or two I usually cut it down to 80 proof. Most folks aren't used to the high proof stuff and it's easy for them to get carried away.
This is grain, which any fool can eat, but for which God intended a more divine means of consumption...

On every UJSM spirit run I pull out a jar (sometimes a quart, sometimes a half gallon) of the best part of the hearts. I label it with the date, the ABV, and any notes about the mash, the ferment and/or the run.
I don't alter the ABV, I just put it away as a control sample. I have a sample from just about every run so far, and I can go back and test taste for educational purposes.
It's interesting to go back and sample runs that were corn and barley, corn and rye, barley and peated rye, barley and smoked rye, corn and wheat, etc. etc. etc.

I have not tried a ujssm but I do prefer my likker a bit proofy. 50% iz pretty smooth. Any lower is for mixed company.
I do drop lower when doing a side by side with a store bought.

I keep my white dog between 50% - 55% and on rare occasion as high as 60%, but I'm the only one who ever drinks it that high and I dilute it well with a mixer at drinking time... I never share any spirits at higher than 50%...

I like my white dog pretty high, 140 proof or so but I don't leave it at that proof if someone else is drinking it, that would be irresponsible.
