storing enzymes?

Just received my package from MileHi.

2.2lbs of Distiller's Yeast Nutrient
1lbs of Alpha-amylase
1lbs. of Gluco-amylase

I live in Louisisna and the temp. already pushes past 100 degrees some days.
Where i keep my distilling equipment the temp is usually between 85-95.

Is this to hot to store the enzymes or should they be kept in the fridge?
And, if kept in the fridge would the freezer be too cold?

don't let yer ferment run get too warm...
tell me how hard it is to do... tell me how expensive it will be... just don't tell me what i can not do...

You need to refrigate them but I don't think it's necessary to keep in the freezer, tho I haven't read anything that says it will hurt them. I keep mine in the bottom drawer of the fridge with my yeasts.

Thats another question.
I have two sugar washes going right now.

Room temp. is regularly around 80.
Is this too hot?

Ive heard that turbo yeast put off a fair amount heat on their own.
So, inside the fermenter is even hotter than the outside air
Should i try and keep them cooler?

at the start of ferment it creates a fair bit of heat and tapers off as the alc% rises.
i have used a pedestal fan blowing on fermenter, this works, and on hotter days you can put a wet towel on in conjuction with fan which will cool it
i luv makin booz.

80F is just fine for virtually all yeasts... Too warm and the colony dies... Too cool and the colony goes dormant... Ale yeasts are about the only strains that like working in the cold...

By and and large enzymes denature at over 40 celcius. keeping them cooler will keep them longer.
Where has all the rum gone? . . .

I live in florida and i am considering no fermenting june through september even though my home has A/C all summer. I'm trying to ferment all things at the lower temperatures to cut down on making some off flavors. I can use a brew belt, heating pad and a ranco controll in a cooler room to do this. :)
