Anyone ever use maple for aging? Charred maple? How about making charcoals from maple (For filtering. Don't need to, just wanna try it for the sake of science)? Someone cut down a maple tree last spring. That's why I'm asking. There's a lot (free) to go around.
I believe some have done it (but not I) - adds a little sweetness/ caramel flavour depending on the sugar levels in the sap when it was cut and the toast/char on the stick. Someone else might chime in with more

Ran both mashes but seperate -

1st one that smelled sour - came out nice but still has a off smell, Kind of sourish - gonna let it air for a few days before making the final verdict!

2nd mash that was just as it should be, super crisp and and nice smell - this one is a keeper for sure.

Practiced making my cuts on feel and smell and less on the proof. Thanks for all the help guys!

I would really like to see a photo of the actual grains (sweetfeed) straight out of the bag.

I just picked this up. It's all grain horse/mule feed. Nothing but corn, oats, (maybe some wheat or barley), and molasses. I can't get to the label right now, but will update when I can. Hope these help.

Thought i'd throw this in too. I just started this batch late yesterday evening. Sorry about the crappy camera. http://youtu.be/CQYg3ZnBwuQ

Thanks. That's what I thought it should look like. The stuff I bought, and ran, fermented fine and tastes good. But, it looks like pellets. The guy at the feed store said there was no pellets but it might look like it because of the mollases binding the grains. I just think he doesn't know what he's talking about.

Not sure I understand what you're getting at. I'm just following what KS put out in the beginning. I've used textured horse feed (documented in this thread earlier) until now. There's been tons of talk of pellets, textured, and additives in this thread that made me second guess my feed choice. I stumbled on this feed by chance, and figured I was doing the right thing by going to an all grain "sweet" feed since KS mentioned "all grain" earlier. AFAIK, all sweet feed is sweetened with molasses.

the grain is not going to ferment.well maybe just a bit.so you have rum with posable small amount of grain flavor.

Never really thought about that Dndr. I've made rum, and this seems to have a different taste. Might just be my imaginations...

True, can't argue with that. I'm sure as I become more experienced I will give the tried and true rums a go, but for now, this sweet feed recipe does a pretty good job.

yes .UJSSM is not whisky..you can not use sugar in true whisky,,has it be all grain..
anything made from sugar cane products is rum.(UJSSM used to say it was not a true whisky until forum was updated) some call it a sugar head..others faux whisky..
another one is brandy this has to be made from all fruit no sugar is allowed during ferment.

I have my first one bubbling now! Had to drive WAY out into the country to find the sweetfeed. Producer's Pride all grain sweetfeed for $13.99 at Tractor Supply.

So, how would you all describe the taste and flavor of this when she comes out the still, being semi-new at this, I'm just not sure what to expect though I know it won't smell like off the shelf whiskey. I started last night and finishing today. Thanks...

It depends on what the grain mix in the SF is and how much Molasses were used. The stuff I have made tastes like Rumski. A cross between light Rum and Whiskey. I think its time to start up another batch. I do them double run on a pot or single run low and slow.

cheers

How long have you aired it and then aged it on oak at 55-65% ABV. I have found anything I oak is gonna take 4-6 months to hit its stride. I don't care for SF white, but that is just my taste.

Actually, as the night went on, it got better though I would like to oak it... This recipe seems to run hotter, about 196F for good drippings compared to the straight up shine I've made. I am running it thru a reflux still in pot mode. Talk soon...

Over at the man-cave on Wed morning and started a SF wash. First one so I went by the recipe. Maybe a little heavy on the sugar. Starting SG was 1.11.

Cooked off some BW before I started the SweetFeed so that I could use the boiling backset. Before I left I was bubbling very well.

Thurs it was rocking.

Today it was dead. I checked the SG and it was .990!!! This is less than 48 hrs! I'm not ready/prepared to cook it off yet!

Hope they all go that well.

Just picked up a bag of sweetfeed at my local co-op. 14% protein variety. It does contain pellets, but when I contacted the manufacturer he said there is no alfalfa in their mix, nor any other grains that are not listed. He said the pellets are to bump up the protein content as it is soybean meal. He also said the vitamin portion is mixed into the pellets.
hope this helps someone.

So i am not completely happy with my sf due to pellets. but after some airing and time, i took a few liters with me to holiday in hungary. bro in law bought bottle of jim beam. tasted my sf and his jb. different, but mine was better. thanx ks. at first i felt my whiskey did not have enough depth in taste. but after some time ... yeah its good! Even with the frkn pellets.

I've got my second generation of SF brewing and I hope to bring in the New Year with it. A big thanks goes out to the folks at hillbillystills.com for being so darn quick when an order is placed. I ordered a pot still head from them to go on my boiler, I have a reflux tower that will work but I want to do the SF recipe right going thru a pot still. Any advice on using the pot still head would be appreciated. Happy New Years to all...
