how long will wash keep?

Post by LearJet »

I just went to pour out a 5 gallon fermentor full of UJSSM that I never got around to running off. I opened the lid expecting nastiness to find a pleasantly alcoholic scent instead. liquid is amber/clear, smells normal. This has been sitting inside under airlock for at least 6 months. Should I run it or toss it?

Nothing lost by running it except a little time and energy, let us know the results!

i treat my wash like wine (sorbate and sulfite) and it can sit for many months before running it-- However that is for vodka or irish potcheen-- However, it may effect flavor of pot still whiskey

Ran this wash last night. I tasted the wash and it was sour. I figured it is supposed to be sour mash whiskey so what the hell. I got 2Qts of 170proof out of my VM before it shut itself off. gonna cut this down to 100 and stick it on oak.

My apologies if this is redundant, I've got a 45gal barrel with a peach, sugar, yeast and water soup that we just haven't had time to deal with. It's been kicking around for a couple months and wonder if the same goes for this as the corn sour mash? Is it possible to over ferment or will the wash start breaking down and decomposing creating nasties and off tastes (or worse) etc.
Buddy had a guy tell him it will last for a long time but it seems to me everything rots and in doing so will meess with the result. I don't want to waste time and energy or worse make someone sick.

the only thing you have to worry about is getting infected and that you will know by smell or taste.
if it smells bad dump it ,if it smells good taste, it should taste like dry wine.

Nice! Thanks Dnderhead, sounds simple enough. I've got to go around and see it, it may even be frozen as its been out in buddy's yard.
