I've made peach, strawberry, blueberry, and blackberry, so far. One thing I couldn't bring myself to do is throw away the fruit. Being 108 degrees, today, I was pulling some ice for my sweet tea out of the freezer and saw the containers of frozen peaches left over from the last batch. Hmmmm....., I took several of the peach slices, and stuffed them down into the ice in the glass, and poured in my tea. OMG!! What a delicious peach iced tea! I made my wife try it - then had to pour myself a new glass
You could taste just a hint of the likker, but those sweet peaches were amazing.

Im having a hell of a time getting my SPD through a coffee filter. Is it all that nessesary to clear it out? If not, I could care less. It smells awesome and tastes great for only being a few hours old.
Also, is this SPD good to mix with anything in particular?

If you don't care if its got floaties. It doesn't really mater.
And most just drink it straight. Or at last I do.
But this OS how I filter it. I take a small mouth qt mason jar a ring and a coffee filter. I place the filter over the mouth of the jar pushing it down into the jar till I just have enough around the edge that the ring will hold it on. Then I sit a large mouth qt jar over the top of the small mouth. Then flip it over. Let it sit for how ever long it takes.
Oh and it will filter through faster if you warm it up a little. Coffee filters are made for hot liquids.

Soda water/ sparkling mineral water is nice for a long refreshing summer drink - cuts the sweetness a bit. I always filter through a piece of old T-Shirt before using a coffee filter... It's much quicker and less aggravating in the long run...

Dumb question, wouldn't leaving strawberries out for weeks make them go bad? or is it the alcohol that keeps them good? But then what about when we put sugar in it?
Also does buying frozen fruit better than fresh fruit? It seems much more expensive for whatever reason.
Currently have mason jars full of frozen strawberries, blueberries, raspberries, and dark cherries (not frozen)

fresh or frozen will work.canned you need a different recipe.

I did a batch of pre frozen and a batch of fresh sliced and frozen for 5 hours. The fresh batch made significantly more syrup with a better flavor. Almost out of that batch already. 800ML doesnt seem to last all that long. A question on diluting with this recipe. The OP says to start with 120 - 150 proof and after the processes involved, to dilute to drinking proof. As it is no longer possible to use a SG meter with the liquid, now containing fruit juices and sugars etc, how would you determine the amount of water to add? Do you simply go on the volumes and original ABV of the starting spirit?
I started a batch with 700mls of 120 proof. After removing it from the fruit and adding the first batch of syrup from the sugar steeping /i'm up to about 1 litre. Would it then be safe to assume that if I were to dilute with an extra 400mls of water I would have something around 60 proof? Twice the starting volume equals half the starting ABV is my logic.

thats what id do.some will be retained by the berries but its as close as you can git with the equipment we have.

Thanks D. As I thought, so I'll progress that way. Looks, smells and tastes pretty good though.
As for the efficacy of the product at making frilly lace undergarments succumb to the forces of gravity and / or libido, I'll let you all know as soon as I've done some field testing. Believe me if it works on my mare, it is a proven fact. I generally have to wait for the planets to align.

Tried to follow this recipe verbatim...but think I'm getting that chalky taste, definitely doesn't have the sweet taste I was expecting. Anyone else have trouble?
I started with plain old frozen berries from the store, added the lemon after removing the berries and before adding the first syrup. Only wondering if I didn't add enough sugar to the syup or just started with sub-standard berries. I started with a pretty good quality neutral.

Just finished my first batch. no way to explain it besides excellent. did some thing a little different with the left over strawberry's. I froze them and I add a couple to each drink they are great wish I had More. Thanks for the recipe.

Yes you can use fresh. The advantage of freezing them is when they freeze the water inside them expands. When it expands it breaks the bindings up inside the berries. So the juices are easier to pull out.
The same goes for fermenting fruit. Or getting it ready to ferment. Just makes it easier to get the good stuff out.

I thought id do up a batch of this and a raspberry one too, i took the SPD to a mates party the other weekend and it was demolished in about 30 minutes.. i cant vouch for the name but i can say the ladies do love it!

If the strawberries act as a filtering agent, would it make sense to use new strawberries to make the syrup or is it the likker in the used berries we are trying to draw out?

I actually think strawberries absorb alcohol and the syrup is drawing not only the last of the flavour but also the minute amount of alc taken in, if you eat one of the strawberries after maceration its pretty full on, but u r right macerating fresh strawberries would definitely intensify the flavour ![Very Happy :ebiggrin:](./images/smilies/icon_e_biggrin.gif)
