Im looking for an all corn recipe, corn, corn malt, water and yeast. I have just about an unlimited supply of corn and have a mill for cracking. Im not interested in sugar head recipes, just all corn, and i will be malting my own corn, i have been experimenting with small amounts of corn to figure out the best and easiest way to malt it and think i am ready to make an all corn whiskey.

Use 100% malted corn then... That eliminates the need for enzymes... And because corn has very little extra enzymes to convert more than itself it works best to malt all of your corn...

I made some all malt corn whiskey once. I do believe it was the best whiskey I've ever made.

Rad, at what temp would you cook an all malted corn mash? Corn gelitanizes at 180, right? But the malt is rendered unusable at just above 150, right? So.... would the procedure be to cook 70-80% of the malted corn to 180 for the standard 90 min to 2 hrs, allow to cool to 150 then add the rest? For the AG it seems that about 12lbs. of corn for a 5-6 ga. wash, I'm in the ball park, right?

just crush,bring temp to 140-150 and hold..about 1 hour.

a cooler or similar works good. heat mash ,,add to cooler ,,leave it to cool on its own.

thats where a wood mash barrel worked good,the wood acted as insulation and held the heat
for several hours.

corn is one I ferment "on the grain"

Would you happen to have any info on water temp before adding the grain? Like x amount of gallons at x temp and x amount of malted corn to make a x gallon mash?

what you want is "strike temperature" here is one calc.others available.

Thanks Dunder, will the corn gelatinize propperly at that low temp or does it matter after the corn has been malted?
Above is a link that I found that may be of some use to others interested in malting thier own corn. Tell me what you think. I think I'm going to give this a go.

I would suggest searching around here for Dnderhead's two bucket method. For malting corn. Or whatever grain you want to malt. :thumbup:

I've looked for this for about an hour and it is still eluding me. I'm using the Google search at the top of the page by putting in Dnderhead's two bucket method. Can someone point me in the right direction or tell me what I'm doing wrong. Thanks in advance

Thanks Prairiepiss I'm reading through some that I have found and like you said they are some good read. The only reason that I posted a question is that I couldn't find the two bucket tread from beginning to end. It also don't help getting side tracked reading something else of interested when searching :D . Thanks again
