Mash Question
I did my usual mash Saturday. Everything was going ok until I got home yesterday and the airlock activity after what is then 48h has markedly slowed. Much more than previous batch's. The gaseous output from the airlock also smelled different, almost like a trash can. Activity has pretty much stopped now at 60 hours. Took a peak, and the mash smells funny. Has it gone bad somehow, and do I need to start over?

Sulfur. I did a SG, and it was 0.990, so I think it is done. Once the sulfur smell dissipates, it smells OK. The problem now is how am I gonna get the rubber stopper for the airlock out of the carboy, since I accidently pushed it through after testing the SG with the thief. I think if the wash is done, I'll be ok. Got a back-up wash in the on-deck circle. If all is ok, I'll run 10 gallons instead of 5. I think I have narrowed it down to OD'ing it with the yeast. My scale was found to be off. So, got some champagne yeast now, so gonna play some with that.

A simple sugar wash. 1.25kg per gal. It has clarified clear now. Will run it tomorrow.

That equates to 19.4% potential ABV... Avoid the greed factor... And if using turbo yeast, avoid that as well... You can do better... Some serious research goes a long ways... And, for the record, when using sugar it's called wash... When using all grains it's called mash, due to the process... When using all fruit it's called must...
