I'm going to be doing a couple Maple Syrup Rum washes in the next couple of weeks. Until now I've been using bakers yeast for this spirit. I'm wondering if there is anyone out there with experience fermenting Maple Syrup that might recommend a better yeast. This is the thread concerning my recipe:

Bakers yeast... Why...??? Because bakers yeast is propagated using molasses, the main ingredient in rum...
Here's a tidbit of information I just discovered the other night... I've known for years that Fleischmann's supplies yeast to distilleries as well as for baking... But what I didn't know was that before prohibition there was a Fleischmann Distillery... Hmmm...???

Try a few little ziplock bags full of a very small amount of weak maple syrup + water solution try a different yeast in each. When the bags finish expanding open them and smell each. Which ever has the best aroma, go for it.
I would recommend something very neutral like California Ale (White Labs) this has basically no aroma if fermented at a cooler temperature, or Wild Yeast if you can manage it, but wild yeast usually is very fruity.

The still is not a liar. Mash and ferment quality is 99.9% of your performance.
