Will Rum "age" in glass?
Hello all,
I do not have access to an oak barrel, and plan to store my rum in a sealed glass jug after steeping with some oak chips. Will long term storage in glass have any refining effect?
Thanks

Aging is aging... It requires time... The extraction of flavors and aromas can be duplicated fairly accurately in comparison to barrel aging by using chips, chunks, sticks, or spirals in a glass jar... We've had several discussion on the various methods of aging... Snoop around and then try a method that suits your needs...

+1 with rads advice
I also don't seal, but use a natural cork stopper. Or just open it from time to time to let it breath.

Here are a couple of links that I found to be very helpful -

I've been using a variant of the nuclear method. I do 3 cycles with JD BBQ chips, strain into gallon jugs, and age for at least 2 months. The nuking seems to do a good job of extracting the goodness of the chips, but there's no shortcut for the benefit of aging, IMO.
I also plan to try T-Pee's method. His method would seem to put a handle on consistency once you get the method down. I'm looking forward to trying it.

Yes...
Many components don't rely on the wood. Esters and other compounds continue to form and change over time. Adding the proper amount of wood, agitating and aerating occasionally speed the good processes.

Re: Will Rum "age" in glass?
I've been debating what i'm going to age in.. while a barrel seems like a good idea or the best. I was going to go with a stainless container of some sort and then toss in chips or sticks. Just seems like to me int eh long run i can reuse it over and over and dont have to rechar a barrel or get a new one.
eh.. decisions decisions.

One way to reuse a barrel over and over, is to drill the bung hole a bit bigger, and toss in some charred oak sticks.

Be aware that when aging in a barrel the evaporation will occur quicker in a smaller barrel. I got a book somewhere here with a metric ton of data on the subject, but can't remember the specifics...bads197 wrote:I've been debating what i'm going to age in.. while a barrel seems like a good idea or the best. To summarize, if you age in a barrel you can expect substantial losses due to evaporation. The liquor gods demand their tribute.

Re: Will Rum "age" in glass?
I was given a gallon barrel as a gift and aged some fifth gen UJ in it. I lost nearly fifty percent to evaporation. The remaining liquor is still the best spirit I've made.
Re: Will Rum "age" in glass?
Two different things going on.
Evapouration of the angels share - can't occur in sealed containers unless there is some form of vapour path, such as a wood or cork top on a glass container.
Flavour modification - hence use of wood chips or blocks in jars of spirits.
Note there are some reports of commercial distillers using accelerated aging with smaller barrels, oak staves and other methods. If you can't tell the difference between a real 20 year old whisky and an accelerated 20 year old whisky, then apparently it is ok to label it as 20 year old!!!

I am so pleased this does not apply to girlfriendsmyles wrote: If you can't tell the difference between a real 20 year old whisky and an accelerated 20 year old whisky, then apparently it is ok to label it as 20 year old!!!

Yes it will get better aged and oaked in Glass, it will get even better aged in a barrel.

Re: Will Rum "age" in glass?
Curious if this works well with fully corked wine bottles (corked with a corker) or if simple tapered cork pressed on by hand is the only way for it to share with the angels?
