I've had success with a recipe using corn meal, sugar, and bakers yeast in a copper pot still. Also with a rum run using mollasses. I've got a batch or UJSM thats been working for 5 days now. I haven't been using an air lock, just plastic wrap over the bucket. After about 3 days I've installed an air lock and going into the 6th day its bubbling at the rate of once every 2 or 3 seconds. Most of the posts I've read say it works off in 3 to 4 days, but I plan to wait until it stops bubbling. I am tempted to remove the lid to see if its starting to settle at all, but I guess I'll wait. I had intended to use hydrometers, alcohol meters and such but after after 5 or 6 runs with the meal and 1 run with mollasses, to hell with gadgets and meters. The post I read about smelling, tasting, burning in a spoon and on a plate etc. was a big help. Hot damn this is a great hobby and this is a great site.

if your airlock is still bubbling I don't think it will be clearing...but after 6 days it should be coming to an end.

Proportions of ingredients and the amount of yeast pitched will have an effect on fermentation time, just as temperature will... Knowing starting and ending SG's can help in calculating ABV but as long as the wash is still bubbling, let it finish... Most washes will start clearing as the ferment slows and will continue clearing after completion... It's your choice as to when you feel the wash is clear enough to rack and distill...

Depending on the weather - I've had UJSM (with same ingredients) take between 3-7 days.
If the airlock is bubbling - Don't touch it!
Also it doesn't hurt to leave it a couple days after the airlock stops to allow everything to clear. Sometimes if I'm lazy I might leave it for a week or sometimes really lazy I've left it for two weeks before running a batch. Never had a problem, doing that either.

I think the problem or rather confusion with the times on this recipe are because on the Wiki I think it says that it's important to distill this between the first and second fermentations. I believe it actually says that it's important to run this after 3 or 4 days before the bacterial fermentation starts. In which case it would be important to know exactly when one fermentation stops and the bacterial starts. I personally think it's fine and dandy to let the bacteria do their thing, but again this may be where everyone has a problem with and panics or asks questions when it goes longer than 3-4 days.

So just to make 100% certain. I am still waiting on my still setup to arrive but I can't wait any longer to make a wash! I just want to make sure if I make my 1st gen of UJSSM tonight, and leave it in fermenters with airlocks it should still be ok to run after 1-2 weeks correct? It won't spoil on me or anything... Wow this thread is a dinosaur... good to know your really doing your reading though.
Itll be fine to set a week or two. Hell, i ferment in an open top 55 gallon plastic drum with a piece of warped plywood for a lid. Some time it takes a week for me to finish running everythingin the barrel and its fine.
