I have a local restaurant that does a Sunday Champagne Brunch - the nice waitress there saves all the champagne bottles for me - I get regular corks from the beer/wine shop and regular beer bottle caps fit as well if you have a crown capper - I store them capped and use a cork after opening a bottle.

I have made it a couple of times - I really like it. Flavor is lighter and dryer than UJSM It is pretty darn good white and lightly aged on oak mine was a lot like a light scotch. It's a little more work, you have to make sure it cooks for a whole 90 minutes, you can't throw it in the fermenter like...
