Seems to me that we were discussing some ideas in this very thread. If you expect me to tell you everything that it cost me a small fortune, years of research, and countless experiments to learn then you're expecting a bit too much. I stated up front that I am a commercial distiller. That means that I feed my four kids by making and marketing a better rum than my competitors.
I am happy to add knowledge that I have gained to the discussions, but I won't give away every secret that made it possible for us to win Best in Class at the biggest rum competition in the western hemisphere. Would you?
Perhaps this isn't the forum for you then, hlgtjr0... Your air of superiority won't bode well here... So far I've read more gloating than anything else... Take a close look at the name of this forum and rethink your motives here...

Superiority? Are you serious? Wow. Not sure where you picked that up.
The name of the forum... where do you think many micros get started?
And I thought a forum was for sharing ideas and experiences for the benifit of all. I am in total agreement with RAD, if you only want to take without giving, this is not the place.

Jeez, take a minute and read where I've interacted in my first day here before jumping to conclusions. I've tried to add to the overall knowledge here (which is impressive!) in the few threads that I have had a chance to participate in so far. Discussing how to help age a neutral spirit, telling you how we do activated carbon filtering that has worked for us, etc...
If y'all prefer for me not to participate, no problem. I'm not easily offended and have a very thick skin.
hlgtjr0, go back and re-read your posts from someone else's viewpoint, forgetting who you are... Then act like you're just another member here and you'll be fine...
Sory hlgtjro I somehow completely missed that you only made rum. I didn't get to look over your site till now. Got another question fer ya. Well maybe not a question. The general public mite never question this statement on your website. " Working directly with Carl, we were able to custom design a small-batch copper pot still that is perfect for making the finest tasting rum. " Pot still? That's one hell of a lot of trays to be a pot still.

We have piping to bypass the column completely. Our rums that are going into barrels don't touch the column at all. Rums that are not going to spend a lot of time on oak go through the column. The vapor flow through the column can be modified as well depending on the destination of the rum.

Technically any still that is made for a single batch production is referred to as a potstill, this can be observed in Holstien's catalogue when referring to multi plate columns on a dedicated boiler, rather than for a continuous operation.
I figured as much. I just found the statement amusing.
Now a serious question? Back to the carbon filtering. You said there are different types. Unfortunately we as hobby distillers (not legal in most of the world) Don't have access to as much as we would like. As far as supplies go. Most of our suppliers sell one kind of activated carbon. And to tell you the truth its probably the same stuff I buy for my fish tank. But if you could give us a little more info on the different types and what to look for maybe we could find suppliers for us hobby guys.
I know I know around here carbon filtering is considered a crutch for a bad process. But in the case of a oak aged white rum. This could be usefull. And if we knew which carbon filtered out what. We could use this in a positive proactive way. Instead of a needed reactive way.

So basicly anything on top of a pot is a pot still. No mater whether it has a forced controllable reflux or none at all?

There are several good sources for ac. The Norit site has a tool to search for ac based on your needs. http://www.norit-ac.com/english/products.asp?branch=2" onclick="window.open(this.href);return false;" rel="nofollow You need to click on Food to get to the alcohols!? We tried several carbons from them. It seems that they recommend powder based solutions for alcohol most of the time. Personally, I find powdered ac to be a pain in the ass to work with. I prefer granular.
You need to dig around on the searches a bit to find options. If you can get through to one of the knowledgeable reps on the phone you can do a lot better than the website.
Not to step on any toes here, but I disagree with the bad process sentiment. IMHO it doesn't matter how well you select your raw ingredients, how you ferment them and how you distill them, if you aren't aging the final product you can almost always benefit from ac. Your mileage may vary.
hlgtjr0(we really need to give you a nickname that we can pronounce so's we can actually spell it without having to do the copy/paste thing!), you've been good and generous with your initial offerings here; don't let some of the others run you off. We have some stiff-necked folks here, but just a few, and they'll calm down.
Not all of everyone's secrets needs to be divulged; yes, if something is a critical safety issue, we -must- make a clear and concise point of it, but otherwise, dropping hints and answering 90% of questions is well above par for any forum. I have a few tricks up my sleeve that I haven't revealed; some of them because I haven't yet completely understood the whys and wherefors of them, and others because they'd likely reveal more of who I am than I wish to to disclose at this time. If Rad or anyone else has a problem with this, then fuck 'em; is it not better to let me share 90% of what I DO know than to run me off and not take-in -any- of it? Time to re-think your position, boys.
Thanks for the link hlgtjr0. I will take a look at it later when I have some time and a bigger screen.Yes I did see the post about the bypass for the column. Like I said I figured as much.
Hey thanks for the info.

I don't expect a guy to give away his livelihood, a guy needs to make a living. I'm sure his competitors read this forum also and I don't think it would be fair for us to ask him to give away the bank.
I'll bet he has a lot of valuable knowledge to share other then his secret recipe/ livelihood.
Welcome aboard.

Yup. The guy's already been giving good discourse to members. It's his right not to give away the farm, just a couple of the implements will be just fine

I am lost sorry, what is a flute then? I thought olddog invented the still with the plate things in it from reading the flute thread. Appologies if I have missed something.
