problems with red star bread yeast

Ok guys i may be missing some thing but whats really wrong with red star bread yeast? From what i understand it just wont produce real high alc. content. I also understand that yeast will die after a certain alc. content so can i hit with the wash with a second round of yeast or will they die right away will they? But beside that can u guys clue me in on some thing. thanks guys sorry to be a noob and a bother

Red Star is the only bread yeast I use, it works fine to 12% maybe higher, I have never pushed it. If you want to go higher get a distillers yeast, like Crosby and Baker DADY or Super Start.

Don't have a clue to what your referring to have ya read the red star yeast in the sticky above your post?
I use a pot still.Sometimes with a thumper

Most yeasties are good up to 14%ish ABV. That's one of the reasons its not recommended to push any over that amount. And considered the max ABV of a wash. 10% to 12% being the best range to stay in. I don't know how much reading you have done. But many of the tried and true recipes are based on baking yeast. And there is a ton of info out there about its use.

I use red star as my main yeast.

Red star bread yeast is just another name brand like fleshmans. The red star thread is about the brewing yeast name brand red star.

It may come as a surprise that some of the yeast manufacturers, Fleischmann's being one as I recall, provide yeast to the distillation industry... The same yeast used for baking...

Well that would explain why i constantly get stellar results using Fleischmann's instant bakers yeast wash after wash............. :thumbup: :thumbup:

Well it starts out kinda bready and once it progresses it smells wine-ish. old lady says it smells like a brewery........ :crazy:

I have read a great deal about yeast and still get a head ache when i think about all the diffrent kinds of yeast. I know that red star is just abrand but i have a 2lbs of that yeast so if i can use what i have its even better .So in general there isnt really any thing wrong with using bread yeast like no off flavor if ran through a pot still?

If you keep your fermentation temps under control and keep the yeast fed, it should turn out just fine.

No there isn't any problem with using it. Like I said. It's my main yeast I use.

What are you using for a recipe?

The Red Star starts the same but then turns fruity. I start mine between 90-95, takes off like a rocket. I'm also using distillers yeast nutrient and Gluco Amylase Enzyme to make sure it goes to 1.000 final gravity or below. My whiskey grain bill is 60% flaked corn, 20% rye malt or wheat malt and 20% distillers malt mashed at 146'-148' for 2 hrs. The yeast won't necessarily die, just poop out if not supplied with enough nutrients. Don't go over 10% abv to be safe. The yeast is proven if you have off flavors it's something else.

ok thanks guys i will just use bread yeast. As for what i'm making i want to go the more traditional route and go with a corn mash. Thanks once again guys.

this is a bit confusing,do you mean "wild" yeast? if so wild yeast is sort of "hit or miss" you mite have a good yeast on not. depending where they came from.if its done inside most likely you will have more bacteria than yeast.best time to "ketch" wild yeast is in spring or fall.
the Id say do a small ferment .and see what it turns out like. you can tell by taste/smill.you might have to do several befor you have one you like.another thing when using "wild" yeast dont make your wash/mash over 5%.

^^^ i wanted to use something other than wild yeast something more reliable that i can use on demand, i also thought wild yeast took way longer.

Wild yeast is merely unpredictable and has no repeatability... Cheap bakers yeast covers both of those issues...

I always use bread yeast since I can get it at the local grocery store. I have used Red Star and Fleischmann's yeasts. It always seems to me that the Fleischmann's yeast does the best for me. The Red Star does not perform very well from I can tell. I will most likely not use Red Star anymore since I have not had good results from it. JMHO for what it"s worth.

I've had good results with Fleshmans....I usually get right around 10% with it....As well do not forget to put in an air tight container and refrigerate after the original seal has been broken.....
thinking inside the box is for squares....
