What's the difference

Post by vinper »

Between 1st run 100 proof and 2nd run 160 proof diluted to 100 proof? If your diluting it down to drink levels why run it twice . Is the answer because you get a cleanier run that you can blend and end up with more product? 2nd question I did the apple proof recipe and didnt like it way to sweet . I would like to make a quart alittle sweeter was thinking about 1/4 brown sugar to a quart 100 proof.

Something is missing...I don't know what rig you use, but if it's a pot still, running it twice will give you a superior distillate.

You could put it that way. Since you didn't specify the type of spirit, I will answer with respect to whisky. Some people find the taste of a single run to be too much flavor. On the second run you will lose some of the flavor. You might say it mellows the flavor. The other thing that you achieve is the proper abv for aging on oak which around 160 proof. Getting 160 proof on a single run with a pot still is pretty difficult.

A slow single pot still run, with very tight cuts, can yield close to the same results as double or triple distilling... How you get from point A to point B is totally up to you just as long as you are satisfied with the resulting spirits... I practice all different methods of getting the spirits I desire... What works best for you and your equipment may or may not work for the next guy...

I would not want to drink hooch that spent much time on oak at 160 proof. Way to astringent tasting. 110 to 130 proof for me. When I do a second run, I dilute with fresh wash down to 27-30% which allows me to take off hearts on second run right in the sweetspot requiring little if any dilution to hit the target for aging on oak.

cheers
