Diammonium Sulfate

My 4th run of UJSSM slowed way down after the 1st 24hrs, so I added some DS as a ferment booster. It seemed to work pretty good as the activity picked right back up. Did I discover something new? I can't seem to find any post's recommending this proceedure, only ones on checking the ph.

Did fermentation pick up and stay constant? Or did you just notice it start foaming when you added the DAP? Almost always a ferment will foam up when a powder or something similar is added. The addition causes the CO2 to ne released. And it looks like it picked back up. But may just fall back to where it was.

Have you been replacing any of the grains? How much grain did you use to how big a batch? What are you using for grain?

Adding nutrients to a nutrient depleted wash. Isn't anything new. But in this particular recipe. The grain should be providing enough nutrients. That you shouldn't need to add any. Unless you aren't changing out the grains. Or are pushing the sugar limits to where the yeasties are using up all the provided nutrients.

Most of the time the problem is Ph related for this recipe. And if it were you problem. The addition of nutrients. May look like it fixed it. But actually only masked the real problem. Kinda like giving a bunch if worn out workers in a bad environment. Some 5 hour energy drinks. Mite get the job done. But at what cost?

Yep, you got it, slowed down again after an hour or so. Didn't foam in the tank, but the bubbling increased in the air lock. Thought I was on to something. I have found since, that the ferment never really stopped, just slowed some, a heater to keep the temp at 71+d makes it work faster also. I know about ph, but my test strips start at 6.4 so they're useless, need better ones. I am changing out any grain that is floating, using a measuring cup, on a 5gal batch I'm switching out 1.5-2.5 cups (liberal measure) per run, need more? I have some calcium carbonate on order and if the sg is still up when it arrives I'll introduce some of that stuff next. Also started a new 10gallon batch as per recipe using 2.5gallons of backset and it's moving merrily along just fine. Thanx.

Not sure what yeast you are using. But if using the bakers yeast recommended in that recipe. Then 71f is to low. And is the main reason it has slowed down. Closer to 80f would ne better.

I'd think Diammonium Sulfate would produce unwanted sulfur... :idea: Might want to rethink using that... :think:

I'm using Red Star DADY yeast. But I am raising the temp as we speak (pump room heater)

I used the DS because it was recommended for the 'Yeast Bomb", didn't think about the sulfer as a problem.
